Whole Wheat Carrot Muffins (with cinnamon & ginger)

I tried this whole wheat carrot muffin recipe from Serious Eats because I wanted to learn how to make healthier baked goodies that would stick to your ribs. It was relatively easy to make even if it has a few more ingredients than regular muffin recipes. The ground ginger was intriguing and this muffin requires honey instead of sugar.

Dad usually does the food processing jobs and the carrots are a little coarse so there’s more texture. The end product looks quite ordinary but the taste of the ginger and cinnamon mixed with the carrots is very unique. There’s an extra bite and because the muffin is so flavorful, it doesn’t need frosting of any kind.

I just ate two with a cup of warm chamomile tea. Mmmmm…
