I was reading an article about the best pan-fried salmon steak ever. It was funny and very exact, even a little scientific. I felt like it was slightly familiar but I never forget a recipe so I could not have read it before.
It turns out that it was written by J. Kenji Lopez-Alt. (Isn’t that the best name ever?) My favorite writer/guru/chef in Serious Eats. I haven’t followed Serious Eats in ages. It’s been a while since I’ve seriously tried new recipes.
I could say that I’ve been busy but being busy is not an excuse! It’s just laziness. Well, I feel quite enthusiastic about cooking (and eating) the scrumptious, fatty salmon fillet in the fridge. Cooking tends to cure my all-around laziness at home. By the time I’m done stuffing myself and feeding the husband — note the hierarchy — I am appalled by the mess I’ve made and go on a cleaning spree. Hell, I’ll probably even do the laundry.
